*Feast around the kitchen table with Matt and Angela on their final night in our house. I ate cucumber, grape tomatoes, kale chips, sunflower sprouts, raw pates (prepackaged) yum! And the crust of the strawberry cheesecake which I shared the filling with Angela.

I made these little snacks with barley flakes, almond butter, and lots of goodies on hand. I had some stragglers that would not roll well so I sprinkled them on coconut vanilla ice cream!

My journey over the last year with raw vegan supplements I think is in need of some reflection. I call myself vegan even though I eat honey, some would strongly disagree. Currently in my kitchen I take (but not necessarily every day) bunches of superfoods and supplements. Here's what I have and how I use it:
*goji berries- great in smoothies, on top of smoothies, as a snack and in raw cookies
*bee pollen - in and on smoothies.
*MSM - in smoothies.
*Sun is Shining - smoothies.
*cacao powder, nibs and butter - desserts, smoothies, shakes.
*coconut oil - desserts, smoothies, shakes.
*E 3 Live - A few big gulps in the morning. Some put E3 in smoothies, I prefer just to get that algae taste in and over with!
*Ocean's Alive Phytoplankton- a few drops hiding in a smoothie!
*maca - just started using Navitas Naturals Maca and I really lve the taste. I think it's a tad darker and richer then my previous Maca Extreme from Sunfoods.
*flax powder and seeds - smoothies, cookies, I've even made raw pancakes with these!
*acai powder, juice and frozen smoothie packets - fabulous in smoothies. The taste and texture take over and that's just fine.
*hemp seeds - making milk, on top of salads, and I'm looking forward to making Kristin's Cheesy Hemp Nacho Sauce!
*chia seeds- puddings, smoothies, or my fav last summer I scattered chia on top of banana slices, figs, and goji berries with raw honey and cacao nibs. Watch out.
*tocos - makes smoothies creamy and gorgeous!
*Vega antioxidant oil blend - salads and smoothies.
*raw honey - practically everything!
So many are for protein boosts, healthy skin and energy. My favorite can't live without items are probably gojis, bee pollen, E 3 Live, honey and cacao. And hemp seeds make the easiest seed milk ever! Just pop them in the blender with filtered water and vanilla and you have a few servings of milk for smoothies, shakes and cereal.
I didn't think I would buy Sun is Shining again but before I could sort out where to buy Vitamineral Green I found SIS and picked it up. Packed with spirulina, nettles, chlorella and more. Check the link if you're interested. One jar lasted me 12 months! But perhaps I should up my serving size? The site says the jar has enough for 30 days! oops!
I love all this food but sometimes struggle with eating simply or eating high packed nutritional (and expensive) punches! Hope this is helpful and interesting!
White chocolate raw vegan cheesecake with (so far) the best crust I've made yet. I made two of these adorable hearts and put the second in the freezer to enjoy next week. I learned how to make this at chef Elaina Love and chef Chaya's class last week. Chaya teaches at Cafe Gratitude and both of these women are so lovely, talented and a treat to be around. I learned so much. Enjoy the photos, I SO wish you all could taste this! I enjoyed the second half of my heart cake with some frozen cherries I let melt all over the top. Oh. My. Yum.
This was so goooooood, I may make it for dinner again tonight. Although my sunburgers didn't turn out like a pattie the taste was just what I was hoping for. This is Ani Phyo's "burger" recipe with a Bubbies pickle and an arugula, cucumber, lemon juice and honey salad. I topped my burger mixture with some nutrtional yeast, try to get that B-12 when I can!
This was last night's dinner, more arugula salad with lemon, celery, zucchini and dulse with cucumber lining the sides of my bowl/plate so I could dip them into some fresh salsa. Yum.
More Ani Phyo! This is her taco nut "meat" with my choice of toppings: sliced mango, cilantro, fresh salsa, avocado and cucumber stuffed into romaine hearts. Really fresh, really beautiful and very good for you.
My awesome sis in law bought Raw Food Real World for me for my birthday and this book is amazing! Twice this week I made the samosa filling and mango chutney. The first time (pictured below) I scooped the samosa filling in to romaine leaves and then added the chunky and very spicy chutney (so spicy in fact I chopped in half a banana) to the top like my own little indian tacos. Crazy! The second time I made these two dishes I let the chutney run in the blender longer to make it less like a salsa and well, more like a true chutney/dressing. I tore up a bunch of romaine and made a big indian salad, sorry no photo. I'm over the moon with these two recipes. So tasty!
Today is my raw food class with one of my favorites, Elaina Love! I'm so happy and excited that she's here in Portland that I'm simply not going to even think about the ridiculous snow outside right now.
In the last week I've made some great raw vegan food from my current fav uncook books: Raw Food Real World and Ani Phyo's, Ani's Raw Food Kitchen. Here are my photos of Ani's donut holes made by me. Dried pineapple, dates, vanilla, coconut, and almonds and they are so lovely and easy to make.
